The Craftsmanship Behind AOI

Grown by a fourth-generation family farm in Uji, Kyoto, AOI begins with tea plants shaded for three weeks before harvest, an age-old practice that enhances amino acid content, enriching both sweetness and umami. After harvest, the Tencha leaves are carefully steamed, dried, and milled onsite to preserve their aroma and freshness.

Compare to ceremonial matcha, AOI undergoes a slightly less refined process, allowing a small amount of stems to remain. This intentional choice adds a bolder mouthfeel and a subtle, invigorating astringency that gives AOI its distinctive strength and balance.

To protect its fresh aroma and vibrant hue, AOI is sealed immediately after milling, locking in its natural vitality until the moment you open the tin.
