Uji Matcha (宇治抹茶) has been Japan's gold standard for 800 years, yet the certified organic version remains vanishingly rare. Japan produces 18% of the world's matcha, but only 4% originates from the storied hills of Kyoto, and less than 1% of that is certified organic.
