MATCHA (抹茶) is a finely ground powder made from Tencha (碾茶), the young leaves of the shade-grown green tea leaves - but not all matcha is the same.Only about 18% of the matcha on the market is from Japan, and of that, just 4% is cultivated in Kyoto, the birthplace of Japanese green tea. Even rarer, a mere 1% of Japanese matcha is certified organic.
