BIWA - Certified Organic Single Cultivar Black Tea

Single Cultivar ( Yamanami) | 1st Flush Spring Harvest | Naturally Sweet

The purest expression of Japanese Wakoucha begins in spring.

BIWA is crafted exclusively from the season's first harvest, when young tea leaves are at their most tender, vibrant, and aromatic. Produced from a single cultivar of organically grown Yamanami, a rare variety developed in Miyazaki, this tea offers a beautifully refined expression of Japanese Wakoucha (和紅茶): delicate, naturally sweet, and remarkably smooth.

Unlike many black teas that are celebrated for strength and boldness, BIWA embraces elegance. The first flush leaves yield a cup of exceptional clarity, revealing gentle honeyed sweetness, delicate white florals, and subtle notes of tropical fruit, carried by an impossibly silky texture and a lingering, clean finish.

Why 1st Flush Matters

In Japan, 1st flush (Ichibancha) is widely regarded as the finest harvest of the year.

After resting through winter, the tea plants produce fresh spring shoots rich in natural sweetness and aromatic compounds. These tender young leaves are typically reserved for Japan's most prized green teas, making first flush Wakoucha a rarity.

By crafting black tea from these exceptional leaves, the producer preserves the freshness and elegance of spring while revealing an entirely different expression of Japanese tea, one that is softer, more floral, and naturally sweet.

The Character of Yamanami

Developed in Miyazaki, Yamanami is a rare Japanese tea cultivar celebrated for its fragrant aromatics and exceptionally smooth character.

Its naturally low astringency allows delicate floral notes and honeyed sweetness to take centre stage, while subtle tropical fruit nuances add depth without overwhelming the palate.

From an Emperor's Cup-Winning Tea Farm

BIWA is cultivated without pesticides or chemical fertilisers by an Emperor's Cup-winning family tea farm in the mountains of Miyazaki.

Since 1983, the farm has been dedicated to organic cultivation and meticulous craftsmanship, producing teas that reflect both the purity of their environment and generations of experience.

Every batch is carefully crafted to honour the character of the leaf rather than transform it, allowing the unique qualities of spring-harvest Yamanami to shine.

TASTE

Smooth & mellow with layered natural sweetness. Tannins are exceptionally soft and well-integrated, creating a gentle & sophisticated mouthfeel

HOW TO ENJOY IT?

Unlike the usual black tea that you have to add milk & sugar to cover the bitterness, Japanese Black Tea is famous for its mild flavour and naturally sweet nature. We recommend best taste it straight just like how you would taste a green tea!

  1. Heat Water: Heat up filtered water, cool it down using a water cooler to 85-90°C (Using water that is too hot will make the tea bitter)
  2. Measure Tea: Add 5g (approx. 1-2 teaspoon) of tea leaves per 250ml of water to your teapot
  3. Steep: Steep for around 45 sec for the 1st infusion. For subsequent infusions, extend the time to 1-2 minutes
  4. Pour: Pour the tea into your cup (or back to the water cooler), make sure to get every last drop to prevent the leaves from over-steeping.
  5. Enjoy: This tea pairs beautifully with desserts or on its own

STORAGE TIPS

To keep your tea leaves fresh, store them in a cool, dry place away from direct sunlight, moisture and odours. Ensure the bag is tightly sealed, and gently press out as much air as possible before closing it
