Crafted from organically grown Yabukita leaves and guided by the rhythm of the season, this tea presents Japanese black tea in its most elegant form: balanced, nuanced, and deeply satisfying.

What Makes BIWA Special

  • Summer Leaves, Naturally Transformed
    Harvested during the warmth of summer, after tiny green leafhoppers (unka) gently feed on the leaves. This natural interaction triggers biochemical changes within the plant, reducing sharpness and encouraging honeyed sweetness and floral complexity, characteristics ideal for black tea production
  • Slow Oxidation, Thoughtful Craft
    After harvesting, the leaves are carefully withered in a well-ventilated space, then rolled into shape, and then the defining process of black tea starts - oxidation. Once optimal depth is reached, the leaves are gently heat-treated to halt oxidation and slowly dried, preserving aromatic clarity and softness
  • A Pioneer of Organic Japanese Tea
    Sourced from the Kinezuka family farm in the hills of Fujieda, Shizuoka, a pioneering organic tea estate practicing natural cultivation since the 1970s. Certified organic under the Japanese Agricultural Standards (JAS), the tea is grown without synthetic chemicals, allowing climate, soil, and natural ecology to shape its character

Produced in small batches on-site, KIKYŌ KURO reflects a rare dedication to black tea within Japan’s predominantly green tea tradition. Each stage from withering to rolling, oxidation, and drying is guided by experience rather than speed, allowing the tea to fully express its seasonal and regional character.

Smooth & mellow with layered natural sweetness. Tannins are exceptionally soft and well-integrated, creating a gentle & sophisticated mouthfeel

HOW TO ENJOY IT?

Unlike the usual black tea that you have to add milk & sugar to cover the bitterness, Japanese Black Tea is famous for its mild flavour and naturally sweet nature. We recommend best taste it straight just like how you would taste a green tea!

  1. Heat Water: Heat up filtered water, cool it down using a water cooler to 85-90°C (Using water that is too hot will make the tea bitter) 
  2. Measure Tea: Add 5g (approx. 1-2 teaspoon) of tea leaves per 250ml of water to your teapot
  3. Steep: Steep for around 45 sec for the 1st infusion. For subsequent infusions, extend the time to 1-2 minutes
  4. Pour: Pour the tea into your cup (or back to the water cooler), make sure to get every last drop to prevent the leaves from over-steeping.
  5. Enjoy: This tea pairs beautifully with desserts or on its own

STORAGE TIPS

To keep your tea leaves fresh, store them in a cool, dry place away from direct sunlight, moisture and odours. Ensure the bag is tightly sealed, and gently press out as much air as possible before closing it
