The Craftsmanship Behind AOI
Grown by a fourth-generation family farm in Uji, Kyoto, AOI begins with tea plants shaded for three weeks before harvest, an age-old practice that enhances amino acid content, enriching both sweetness and umami. After harvest, the Tencha leaves are carefully steamed, dried, and milled onsite to preserve their aroma and freshness.
Unlike ceremonial matcha, AOI undergoes a slightly less refined process, allowing a small amount of stems to remain. This intentional choice adds a bolder mouthfeel and a subtle, invigorating astringency that gives AOI its distinctive strength and balance.
To protect its fresh aroma and vibrant hue, AOI is sealed immediately after milling, locking in its natural vitality until the moment you open the tin.

Tried all 3 matcha powders. This AOI Matcha, feels best when used in lattes or mixed into drinks and even desserts. It’s got a strong, punchy matcha taste, vegetal and a bit astringent, which actually works well when you’re pairing it with milk or sweetness. The flavour really cuts through and holds its own.
Such a beautiful matcha powder which brings so much joy to my mornings. I did not expect the colour to be so vibrant in real life! The taste is light and pleasant and comes tastefully stored in a beautiful tin which sits proudly on my shelf. One of my favourite matcha powders that I keep reaching for!
