AOI is not your typical everyday matcha. While most all-purpose matcha powders are made from lower-grade leaves, AOI is crafted from the same premium, 1st flush tencha leaves used in our ceremonial-grade matcha, a rarity in its category. Grown by a 4th-generation family farm in Wazuka, Kyoto, the heart of authentic Uji matcha, this unique blend of Okumidori and Yabukita cultivars offers a bold flavour and robust body that is simply unmatched for daily enjoyment.
The Secret to AOI’s Quality
Our dedication to quality starts at the source. The tea plants are shade-grown for 3 weeks before harvest, naturally enhancing their amino acid content for a deeper, more complex flavour. After harvest, the leaves are carefully ground and packed onsite to lock in maximum freshness.
Unlike ceremonial matcha, which is meticulously sorted to remove all stems and veins, AOI undergoes lesser refinement. This allows a small amount of stems to remain, giving it:
- A fuller body and a more robust mouthfeel
- A pleasant touch of astringency that adds character and punch
- A bold flavour that shines whether enjoyed straight or in your favorite recipes

FLAVOUR PROFILE
AROMA: A fresh and creamy aroma with subtle vegetal and nutty undertones
TASTE: Medium-bodied with a pleasant green intensity, perfectly balanced by a mild astringency and a hint of creamy sweetness. The flavour is bold enough to cut through milk or other ingredients
HOW TO ENJOY IT?
Creamy Matcha Lattes
- Sift: Sift 2g of AOI matcha into a chawan
- Combine: Add a 40ml of 70-80°C water and whisk into a smooth paste
- Pour: Pour in your steamed milk or milk alternative of choice
- Sweeten (Optional): Add a touch of honey or maple syrup to taste
Straight Matcha (Bold Taste)
- Sift: Sift 1-2g of AOI matcha into your tea bowl
- Whisk: Add 70ml of 70-80°C hot water and whisk until a light foam forms
- Enjoy: Savour the tea’s robust flavour and energy lift
You can also use your creativity to blend it into smoothies, desserts, or any of your favourite recipes!

To preserve matcha’s vibrant color and flavour, store it in a cool, dry place away from direct sunlight. For optimal quality, enjoy within 1-2 months of opening since colour and aroma naturally fade over time. Refrigeration is not recommended as odours and condensation can compromise quality. A stable, dry environment is the best way to keep your matcha fresh

Tried all 3 matcha powders. This AOI Matcha, feels best when used in lattes or mixed into drinks and even desserts. It’s got a strong, punchy matcha taste, vegetal and a bit astringent, which actually works well when you’re pairing it with milk or sweetness. The flavour really cuts through and holds its own.
Such a beautiful matcha powder which brings so much joy to my mornings. I did not expect the colour to be so vibrant in real life! The taste is light and pleasant and comes tastefully stored in a beautiful tin which sits proudly on my shelf. One of my favourite matcha powders that I keep reaching for!
